Rosario's Tacos began as more than just a business; it was a tribute to a mother's enduring love and legacy. Founded in honor of my mother, who passed away from breast cancer on March 17th, 2013, the restaurant embodies her spirit and passion for life. The journey started modestly, with a catering service that quickly became a beacon of comfort and joy during the challenges of the COVID lockdown. Through our food, we brought people together, even in isolation, and Rosario's Tacos began to take root in the hearts of our community.

As the demand for our catering grew, so did the vision for what Rosario's Tacos could become. We transformed our garage into a bustling hub of culinary creativity, and it was here that our signature Quesabirria tacos were born. This small, humble space became the birthplace of flavors that would soon define our brand. Among them, our award-winning Surf & Turf Quesabirria tacos, a unique blend of land and sea, became a fan favorite. The garage, once a quiet place of reflection, was now alive with the energy of something truly special.

The success of our garage operation led to the next evolution of Rosario's Tacos: a food trailer that allowed us to bring our beloved dishes to a wider audience. This mobile kitchen not only expanded our reach but also deepened our connection with the community. We traveled to local events, farmers' markets, and neighborhoods, spreading the love and flavors that had become synonymous with our name. The food trailer was a turning point, opening new doors and setting the stage for the future of Rosario's Tacos.

Two years ago, we took the bold step of opening our first restaurant location. This brick-and-mortar establishment is a testament to the journey we've been on for the past nine years—a journey that began with a mother's love and grew into a thriving business. Every dish we serve is a reflection of the values she instilled in us: love, dedication, and the importance of family.
